When you write terraria, is one of you actually playing the game to copy the things the mindless guys say or do you have them memorised or do you have a list of things they can say written down to refer to and pick one or something else?

I've actually purposely added lines where it seems appropriate, I need to get a library of those set up too. I'll get around to it eventually.

Since she's originally from Grand Victoria (which has significant British influence), and maintains a cover identity there as a noble heiress, you're not far wrong.

This is a different-ish hypothetical future Sable from a slightly different Terraria adventure where the NPCs don't have a controlling intelligence.
