Younger and healthier, yes. Enough that they don't get sick and old and eventually dead, no.

You cannot steal or borrow or enchant-for-others'-momentum-dependency.

I assume you can alao keep others younger and healthier (or speed their death) too, right?

How difficult would it be for a sorcerer to keep friends/family alive and healthy indefinitely? I’m primarily asking because you said Kithabel is worried about her parents dying before she can resurrect them, and it seems easier to just make them not die.

You can do some for other people, but not so much that sorcerers who cannot yet resurrect the dead can keep people besides themselves alive indefinitely (and there are things that could kill her parents besides old age).

Within their specialty, are specialists more powerful, less powerful, or about the same as sorceren?

Like, if you had a bunch of moving-stuff-around specialists with 30 years or momentum each, and a bunch of sorceren with 30 years' momentum each, which bunch would need to be bigger to cooperatively pull the moon out of the sky?

A year of momentum isn't all one thing (it matters how much magic you do every day; it's theoretically possible to pull off a balancing act that leaves you at "just learned to fly" level forever) but typical sorcerers are more powerful than specialists in the specialists' turf.

I understand that the native magic isn't good at this but could a person's mind state be changed in such way that they could produce magic/momentum as a default?

The strength of how much you want something can affect how quickly and efficiently and exactly you can accomplish that something, but it doesn't make the something add more to your momentum than it would if you accomplished the same result with a less intense desire.

I don't know what you mean by producing magic or momentum as a default.

If I understand correctly, the magic requires some sort of mindset that requires "some" choice and effort to keep. The idea is having the altered mind doing it naturally like a background process that happens even if the person is distracted.

There are some bits of magic that are better than nothing that you can do without paying continuous attention (staying invisible, not falling out of the sky when startled, whatever). It is fairly common for sorceren (thank you for the plural, Ade) to be airborne nearly all of the time for more or less this reason. It's not nearly as good as doing something novel, though, both for variety and power reasons.
