So does that mean that if a born skykin and a turned skykin have kids then the kids get the nontransmissible skykin cosmetic traits?

Yes. If both your parents are e.g. Moonsingers but only one of them has the born Moonsinger cosmetic trait, you are nearly guaranteed to get it yourself.

Does the stopping thing even out or just alternate?

By which I mean, you said that a starspeaker/moonsinger hybrid could end up either Young Adult or Adult, but if you had a starspeaker/sunwalker hybrid, would they end up on Adult or possibly be either Elder or Young Adult or some combination?

A dawn-kin (Starspeaker/Sunwalker) with no Moonsinger in them will either stop at Young Adult or stop at Elder. It doesn't average out.

Five-subtype groups ideas:
Animals. Themed after large groups of animals: mammals; avians; reptiles; fishes-and-amphibians; and insects-and-invertebrates.
Alligment. Themed after the D&D style aligments, albeit they don't need to reflect on the person's moral/ethical choises: Angel-inspired (good); Demon-inspired (evil); "druid"-inspired maybe similar to wood elves (neutral); there is no good creatures to properly represent "order" and "chaos", but they could draw elements from the inevitable or slaad?
*"Factions". Themed after some RTS type game factions, which draws elements from the Alligments theme above: Celestial-Angel; Infernal-Demons; Shadow-Necromancy; Nature-Druids; Arcane-Wizards.
Chinese Elements. Themed after exactly what it says: Wood, Metal, Earth, Water and Fire.
*Heavenly Creatures.Themed after https://en.wikipedia.org/wiki/Four_Symbols_%28China%29 it would go: Azure Dragon (Wood-Spring); Phoenix (Fire-Summer); Tiger (Metal-Fall); Turtle (Water-Winter); Yellow Dragon (Earth).
Gems. One of the "esoteric" groups since it would draw/make connections with the associated gems. Feel free to make the Steven Universe connections. I know you want to.
Metals. One of the "esoteric" groups since it would draw/make connections with the associated metals: Iron (reliability and crafting); Bronze (combat and honor); Silver (purity and spirituality); Gold (majesty and power); Quicksilver (speed and trickery).
Magic Types. Inspired by D&D magical schools, there is 8-types but some can be discarded. Or, if you ever want to do a 8-type groups here is your inspiration. The 8 schools are: Abjuration, Conjuration, Divination, Enchantment, Evocation, Illusion, Necromancy and Transmutation.
*The 8 schools can be simplified into: Abjuration (provides protection magic); Conjuration-Evocation (provides energy and matter creation); Divination (seers and scrying magic), Enchantment-Illusion (affects mind and perception), Transmutation (change things). With Necromacy dropped or divided in the other groups.
Magical creatures. Any group of iconic magical beings the most relevants: Dragons (represented/associated with power); Unicorns (represented/associated with purity); Phoenix (represented/associated with life); Sphinx (represented/associated with wisdom); Gryphon (represented/associated with courage).
*Other creatures: Pegasi, Hydras, Sea-serpents, thunderbirds, anything really.
Mana colors. Magic the gathering mana colors, have associations and themes, that I couldn't easily condense. For example, Red is associated with fire (and energy including cold), emotions, chaos, moutains and orcs/goblins. Ask me more if interested.
People's parts. The non-elemental parts of the quinn's elemental associations: Flesh, Blood, Bone, Spirit and Mind.

I know for sure I don't want to do anything that significantly overlaps with existing groups, so elemental stuff is probably out because elementals, and a theme group with a mind-focused member would overlap with Luminants...

I also somewhat don't want to use things that could very easily have way more than five things, like gemstones or metals, because it closes off those categories down the line.

Does anyone else have any more ideas to throw at me? What comes in fives and doesn't overlap with an existing theme?

Copy... I mean, be inspired by the Five Maidens from exalted:
Mercury, Maiden of Journeys. Her color is yellow and her portfolio includes travel, roads and messages.
Venus, Maiden of Serenity. Her color is light blue and her portfolio includes marriage, love, sexuality, joy and all other pleasures.
Mars, Maiden of Battles. Her color is red. Her portfolio encompasses all of battle, ranging from technology to logistics to specific battles. She is generally considered an inferior warrior but superior strategist to the Unconquered Sun.
Jupiter, Maiden of Secrets. Her color is green. Her portfolio is secrets, secretive and a secret.
Saturn, Maiden of Endings. Her color is violet. Her portfolio covers change and endings, whether it be the death of an animal or the Usurpation.
They don't need to be planet-associated and some themes could be switched around, like Secrets for "knowledge" and Endings for "change"?
